Christmas is quickly approaching – each year I vow to do better in prepping for it to try to keep things more relaxed, but it always seems to just come too quickly! Luckily, food isn’t usually a stressor for me. Probably because I love to bake. And eat. 😏
For those that might not feel quite the same about food prep, this pomegranate brie crostini is just your thing. Pretty, festive, and delicious. Serve it at your next Christmas gathering, or just make it for yourself and eat it while gazing at your Christmas tree lights…it’ll help relieve some of that stress from holiday craziness. 😉Pomegranate Brie Crostini
baguette, sliced
olive oil
brie, sliced
pomegranate seeds
fresh rosemary, chopped (I left mine in longer stems for the photos only)
Brush each side of baguette slices lightly with olive oil. Bake under the broiler just until lightly toasted (this takes 1-5 minutes, depending on your broiler, watch it carefully). Flip baguette slices over, top with brie slices and broil till cheese is melted and baguette is toasted (again, watch closely so it doesn’t burn). Top with chopped rosemary and pomegranate seeds. Serve immediately.
