This cheesy green chile egg casserole is quick and easy to make and packed full of flavor! The older I’m getting, the more fond of breakfast casseroles I’m getting! I think because they’re such a great way to feed a crowd for brunch. Or in my case, feed teenage boys with seemingly bottomless stomachs!
This recipe was introduced to me by my aunt, the source of many of my delicious recipes! She regularly hosts brunch for our family and has made this a few times. The most recent time, it was getting endless rave reviews and I knew I needed to add it to my recipe box here. It’s adapted from AllRecipes and is one of the easiest egg casseroles I’ve put together!

Ingredients for Cheesy Green Chile Egg Casserole:
- butter
- eggs
- cottage cheese
- shredded cheese (any combination of cheddar, pepper jack, or Monterey or colby jack)
- diced green chiles (mild or hot)
- flour
- baking powder
- seasoned salt
- fresh ground pepper, to taste
Cottage Cheese:
Yes, this recipe has cottage cheese in it. Great for more added protein! And no, it doesn’t taste like cottage cheese. It just gives the casserole a creamier texture!
Shredded Cheese:
For the shredded cheese, you’ll want to shred your own, not buy the pre-shredded kind. Pre-shredded cheese has a coating on it that can affect the way it melts and the taste. So take the extra few minutes to shred your own. I also think it adds a lot more flavor to use a variety. I used pepper jack, cheddar and Colby jack, and I think this combination is perfect!
Green Chiles:
You can use mild or hot diced green chiles for this. I think hot would be amazing, however I have a kid that doesn’t like spicy things, so I used mild.
Feel free to customize this egg casserole to your liking! I love this casserole because of the simple ingredient list and how easy it is to make, and still has so much flavor. But if you want, you could add cooked bacon or breakfast sausage. Or some sautéed bell peppers would be delicious too. See the measurements and full recipe below!

The best cheesy green chile egg casserole. Quick and easy to make and full of flavor!
- 6 tablespoons salted butter
- 12 eggs
- 16 ounces cottage cheese
- 16 ounces shredded cheese any combination of cheddar, pepper jack, or Monterey or colby jack
- 8 ounces diced green chiles mild or hot
- 1/4 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon seasoned salt
- fresh ground pepper to taste

Preheat oven to 350ºF.

Place butter into 9×13 baking dish, and place it in the oven while the oven is preheating, until the butter is melted.

In a large mixing bowl, mix eggs, cottage cheese, shredded cheese, green chiles, flour, baking powder, salt and pepper until combined.

Pour mixture over the melted butter in the baking dish.

Bake at 350ºF for about 40-50minutes, or until middle of casserole is set.

Remove from oven and let sit for 5 minutes. Cut into pieces and serve hot.
Casserole can be made the night before. Follow all steps as directed, but don’t bake it (you can just melt the butter in the microwave and pour into the pan). Cover and refrigerate overnight. Remove from fridge and preheat oven to 350ºF. Remove cover from casserole and bake as directed, baking time may need to be increased slightly due to being refrigerated overnight.
