Sriracha, Bacon & Egg Breakfast Sandwich

I think I might have spent more time trying to come up with a name for this breakfast sandwich than it took me to actually make it! 😉 Should I stick with the basic: Breakfast Sandwich or pick out some of the ingredients and use those in the name?? And then, which ingredients get to go in the title?! Oh the tough decisions a blogger must face! I’m not sure if my choice was the best choice, but nevertheless, this breakfast sandwich needs to be made & enjoyed by you!Sriracha, Bacon & Egg Breakfast Sandwich @themerrythoughtA couple weekends ago, my sister Marla & I took a last minute girl’s weekend trip; we booked a hotel and enjoyed a couple days of eating, shopping, trying to figure out snapchat (feeling old because I can’t keep up with all the social media apps or figure out how to even use them!😖), and most importantly, enjoying some glorious sleep!Sriracha, Bacon & Egg Breakfast Sandwich @themerrythoughtI loved getting a chance to explore some new food places around Rochester as well as visiting some old favorites – one of those favorites being Hart’s Local Grocers. It’s not only the cutest little grocery store, they have amazing sandwiches – we’ve raved about them a few times here on the blog! If you live locally and haven’t been yet, I highly recommend you get yourself there pronto and devour some sandwiches! Since we don’t live quite close enough to visit regularly for breakfast, I bought some rolls so that I could make my own when I needed to indulge in a delicious breakfast sandwich! The rolls are a key part of this sandwich – don’t skimp on your rolls, buy the best you can find, preferably fresh from a bakery. So for those of you who don’t live close enough for a visit to Hart’s, here’s my take on their delicious signature breakfast sandwich.Breakfast Sandwich @themerrythought |Sriracha, Avocado, Bacon, Egg & CheeseSriracha, Bacon & Egg Breakfast Sandwich

rolls (the best quality you can find!)
Sriracha mayo (recipe below)
arugula (or any leafy greens really)
2 cooked eggs (cook to your liking, I like a tiny bit of a runny yolk)
cheese – I used Gouda, a favorite of mine
avocado
bacon

Spread Sriracha mayo on each side of your roll. Pile on remaining ingredients as desired & enjoy!

Sriracha Mayo
1/4 cup mayonnaise
2 teaspoons Sriracha sauce (adjust to your liking)
salt & pepper, to taste

In a small bowl, stir together ingredients. Keep refrigerated until ready to use.Sriracha, Bacon & Egg Breakfast Sandwich @themerrythought
