Cheesy Green Chile Egg Casserole

The best cheesy green chile egg casserole. Quick and easy to make and full of flavor!

Ingredients

  • 6 tablespoons salted butter
  • 12 eggs
  • 16 ounces cottage cheese
  • 16 ounces shredded cheese any combination of cheddar, pepper jack, or Monterey or colby jack
  • 8 ounces diced green chiles mild or hot
  • 1/4 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon seasoned salt
  • fresh ground pepper to taste

Instructions

  1. Preheat oven to 350ºF.
  2. Place butter into 9x13 baking dish, and place it in the oven while the oven is preheating, until the butter is melted.
  3. In a large mixing bowl, mix eggs, cottage cheese, shredded cheese, green chiles, flour, baking powder, salt and pepper until combined.

  4. Pour mixture over the melted butter in the baking dish.
  5. Bake at 350ºF for about 40-50minutes, or until middle of casserole is set.

  6. Remove from oven and let sit for 5 minutes. Cut into pieces and serve hot.

Recipe Notes

Casserole can be made the night before. Follow all steps as directed, but don’t bake it (you can just melt the butter in the microwave and pour into the pan). Cover and refrigerate overnight. Remove from fridge and preheat oven to 350ºF. Remove cover from casserole and bake as directed, baking time may need to be increased slightly due to being refrigerated overnight.
