Blueberry Mint Green Smoothie @themerrythought Last week we shared our Green Pineapple Smoothie and we promised that we’d be back with another… and here it is! This one was my favorite. I’m in love the fresh mint flavor! (Which is probably why I’ve been drinking our Kiwi Lime Mojito nonstop lately.)

Blueberry Mint Green Smoothie

A healthy and delicious smoothie!

Course: Breakfast, Snack
  • 2 cups spinach (this will blend better if you freeze it beforehand)
  • 2 cups blueberries (I used half fresh, half frozen)
  • 1 kiwi
  • 3-4 large mint leaves
  • 1 cup coconut water
  • 1 cup ice
  1. Put all ingredients in a blender and mix it up!

    I modified the recipe a bit- using about a cup of spinach, 1 cup blueberries, 2 mint leaves, about 1 cup coconut water and then a little bit of regular water, a few ice cubes, and I added half a frozen banana. It turned out great! Thanks for the inspiration!ReplyCancel
