Watermelon is a staple in our house over the summer months! My boys love snacking on it, and for me, watermelon is the only melon fruit that I actually eat (I know – I’m so weird that I don’t like any melons! 😁). I was slicing some up recently and my little sister told me I should try grilling some, her and her husband had tried it before, and since I’m game for grilling things you normally wouldn’t grill, I gave it a try! I had some limes and mint leftover from making mocktails, and those sounded like good additions to pair with watermelon (similar to the mint summer salad Caitlin shared last year). Mike enjoys some salt on his watermelon (anyone else a fan of that combo?), so if you’d like, you can add some salt to it – I chose pink himalayan salt to use with ours. (I prefer mine with just the lime & mint though!)

watermelon – cut into slices
limes – cut into wedges
mint leaves – finely chopped
salt – optional
Grill watermelon over medium heat until just slightly charred (it will take 2-5 minutes). Arrange slices on a platter. Squeeze lime wedges over slices. Top with chopped mint leaves and salt (if desired).
