Peanut Butter Oatmeal Energy Bites @themerrythoughtOne of the things I need to have to make it through no refined sugar months are quick, easy snacks that can satisfy my craving for something sweet, while still be relatively healthy! One of my favorites is the Natural Peanut Butter Fudge I shared back in January. I think for the month of April, these little gems will be my go-to snack!
These are so easy to make (they’re no-bake!) and have the added benefit of protein & nutrients from the peanut butter and chia seeds. And while these definitely are a healthier snack option, I wouldn’t suggest binging on them, but one or two now & then definitely keeps the hangriness at bay! 😉Peanut Butter Oatmeal Energy Bites @themerrythoughtI made a couple batches of these, and didn’t add as much chia seeds to the dough for one batch, and instead rolled the balls in the chia seeds after. It’s purely just for looks – you can add in the seeds however you like. You can of course make these without the chia seeds, but I highly recommend using them (or another super seed like hemp or flax) because they’re just so dang good for you and really contribute to the nutrient boost!Peanut Butter Oatmeal Energy Bites @themerrythoughtPeanut Butter Oatmeal Energy Bites @themerrythoughtPeanut Butter Oatmeal Energy Bites

2 cups old fashioned oats
1/2 cup natural peanut butter
1/4 cup honey
1/4 teaspoon cinnamon
2 tablespoons chia seeds

Mix together all ingredients. Shape into one to two inch size balls. If the balls are not sticking together well, you can pop the dough in the fridge or freezer to chill for a bit, then try rolling. You could also add a bit more of the “sticky” ingredients (peanut butter/honey) to help hold them together. Place on wax paper lined baking sheet and refrigerate for a couple hours. Once chilled, placed in airtight container and keep refrigerated. Makes approximately 16, 1 1/2-inch balls.     Beth - I really want to start eating super healthy and these look like a perfect snacking alternative to chocolate and things, although would it be unhealthy to dip a few in dark chocolate? or am i just over indulging still! either way I’d love to just try out your recipe (with out the chocolate)

      Manda - Hi Beth – I think dipping some in dark chocolate sounds delicious and definitely not too unhealthy. I added no chocolate only because I’m doing no refined sugar this month, and I’m trying to be as “good” as possible. I say go for it! :)ReplyCancel
