This watermelon fruit pizza has been on my to-make list for years. I don’t know what took me so long to get to it. It’s delicious and I definitely should have been making it long before now. And that’s saying a lot coming from someone who doesn’t love watermelon. I know, I know, I’m not sure what’s wrong with me either. I want to love watermelon the way it seems everyone else does, but it’s always been just okay in my book. But turn it into this delectable snack, and I’ll gobble it down!
This watermelon fruit pizza has a cream cheese whipped topping on it, mixed fruit and mint leaves. It’s easy to customize with your favorite fruits. And if you’re trying to be really healthy, you can leave off the cream cheese topping, or just do a drizzle of it. It also can work for the 4th of July, with the red, white and blue! It’s a refreshing snack or dessert – perfect for hot summer days!

Ingredients for Watermelon Fruit Pizza:
- watermelon
- cream cheese
- powdered sugar
- vanilla extract
- cool whip or homemade whipped cream
- assorted fruit
- mint leaves

Watermelon slices with a cream cheese whipped topping, mixed fruit and mint. A refreshing snack or dessert.
- seedless watermelon
- cream cheese topping
- assorted fruit (diced as needed)
- mint leaves, diced (optional)
- 4 ounces cream cheese, softened
- 1/3 cup powdered sugar
- 1/2 teaspoon pure vanilla extract
- 1-1/4 cups cool whip or homemade whipped cream

Mix cream cheese, powdered sugar and vanilla together until smooth & creamy.

Fold in whipped cream (cool whip) until thoroughly mixed.

Place in the refrigerator while slicing the watermelon. (You can make this ahead and store, covered, in the fridge).

Cut watermelon into wedges.

Top with cream cheese mixture.

Add fruit and mint leaves.

Serve immediately.
