Watermelon Cooler

Another watermelon recipe! Because it’s that time of year…and I made good use of the watermelon we had! 😉 We recently had a really hot spell, and this watermelon cooler was the perfect drink during that week. It’s cool, refreshing and quick and easy to blend up!

This drink blends juicy watermelon with tart lemon, using a little bit of lemon sorbet for sweetness and adding a bit of slushiness to the texture as well. This was inspired by a Paula Deen recipe I found a while back. I liked that it used lemon sorbet, instead of just lemon & sugar.

This drink does have some texture to it…and it will vary, depending on how well you blend the watermelon and ice. For one batch I made, I strained it through a sieve after blending, and my boys preferred that smooth, more juice like drink. But I think it’s great as is, right from the blender!

Ingredients for Watermelon Cooler:

  • seedless watermelon
  • lemon sorbet
  • lemon juice
  • ice
  • mint (if you want it for garnish)

For this recipe, you just need to cut the watermelon, add ingredients to the blender or food processor, blend, and serve! See below for the exact measurements and full recipe.

Watermelon Cooler

This watermelon cooler recipe is a refreshing, easy to make drink with watermelon and lemon.

Ingredients
  • 5 cups seedless watermelon, cut into chunks (rind removed)
  • 1 cup lemon sorbet
  • 3 tablespoons fresh squeezed lemon juice
  • 2 cups ice
  • fresh mint, for garnish
  • small watermelon wedges, for garnish
Instructions
  1. In a food processor, blend watermelon, lemon sorbet, lemon juice and ice until very smooth.

  2. Pour into glasses and garnish with watermelon wedges and mint, if desired.

  3. Serve immediately.
