Salted Caramel Rice Krispie Treats

These salted caramel rice krispie treats are the best rice krispie treats I’ve ever had. And I’m not the only person to have made that claim! I think every person who takes a bite of these says that! And as a lover of rice krispie treats, I don’t make that claim lightly.

Besides having a great love for rice krispie treats, I also deeply love salted caramel. And while you’re definitely making a salted caramel base to mix the marshmallows into, the overall flavor doesn’t scream salted caramel. It just somehow enhances the already perfect flavor of rice krispie treats, and then gives a slight salty touch. And you are left with these treats that are absolutely perfect and so addicting. Trust me, you just need to make these.

This is a recipe I found over on AllRecipes and then tweaked a little bit. They are a little more work than making regular rice krispie treats. But still a no bake dessert, and still easy enough! I think the hardest part might be stirring it all together, because it’s a bit stickier than normal. So obviously if stirring is the hardest part, these are still easy to make!

These rice krispie treats are also slightly bigger (taller) bars than the typical ones, so you’re going to use more cereal, more marshmallows and more butter. Then it just adds in some brown sugar, heavy cream and sea salt flakes. I really think using sea salt flakes, not just regular sea salt, makes a big difference in certain recipes, this being one of those. I use Maldon sea salt flakes, and love those.

Ingredients for Salted Caramel Rice Krispie Treats:

  • rice krispies cereal 
  • mini marshmallows (you need a 16 ounce bag, or buy two of the regular 10 ounce bags)
  • salted butter
  • brown sugar
  • heavy whipping cream
  • sea salt flakes (I use these sea salt flakes and love them for these type of recipes)

Salted Caramel Rice Krisipie Treats

These salted caramel rice krispie treats are the best rice krispie treats ever! A salted caramel base with marshmallows and rice krispies mixed in.

Course: Dessert
Ingredients
  • 9 cups rice krispies cereal
  • 16 ounces mini marshmallows
  • 3/4 cup (1-1/2 sticks) salted butter
  • 3/4 cup brown sugar
  • 1/3 cup heavy whipping cream
  • 1 teaspoon sea salt flakes, plus additional for sprinkling on top
Instructions
  1. Spray a 9×13 pan with cooking spray.
  2. Place cereal and 1-1/2 cups of the mini marshmallows in a large bowl.

  3. Melt butter in a large saucepan over medium heat.
  4. Add in brown sugar and heavy cream.
  5. Continue to cook over medium low heat, stirring almost constantly (I use a whisk), for about 6 minutes, until the mixture becomes thicker.

  6. Stir in sea salt flakes.
  7. Remove from heat and stir in the remaining marshmallows, until marshmallows have completely melted in.
  8. Pour caramel marshmallow mixture over the rice krispies, stirring immediately to coat all the rice krispies. This can be a little tough, since it’s thicker with the caramel. Try to mostly be folding the mixture, so you don’t crush the rice krispies.
  9. Once the cereal is completely coated, pour mixture into prepared pan and gently press into an even layer. (You don’t want to press too hard or it will crush/compact the cereal too much and change the texture of the bars).
  10. Top bars with additional sprinkle of sea salt flakes.
  11. Allow to cool, then cut into squares.
