Salted Caramel Rice Krisipie Treats

These salted caramel rice krispie treats are the best rice krispie treats ever! A salted caramel base with marshmallows and rice krispies mixed in.

Ingredients

  • 9 cups rice krispies cereal
  • 16 ounces mini marshmallows
  • 3/4 cup (1-1/2 sticks) salted butter
  • 3/4 cup brown sugar
  • 1/3 cup heavy whipping cream
  • 1 teaspoon sea salt flakes, plus additional for sprinkling on top

Instructions

  1. Spray a 9x13 pan with cooking spray.
  2. Place cereal and 1-1/2 cups of the mini marshmallows in a large bowl.

  3. Melt butter in a large saucepan over medium heat.
  4. Add in brown sugar and heavy cream.
  5. Continue to cook over medium low heat, stirring almost constantly (I use a whisk), for about 6 minutes, until the mixture becomes thicker.

  6. Stir in sea salt flakes.
  7. Remove from heat and stir in the remaining marshmallows, until marshmallows have completely melted in.
  8. Pour caramel marshmallow mixture over the rice krispies, stirring immediately to coat all the rice krispies. This can be a little tough, since it’s thicker with the caramel. Try to mostly be folding the mixture, so you don’t crush the rice krispies.
  9. Once the cereal is completely coated, pour mixture into prepared pan and gently press into an even layer. (You don’t want to press too hard or it will crush/compact the cereal too much and change the texture of the bars).
  10. Top bars with additional sprinkle of sea salt flakes.
  11. Allow to cool, then cut into squares.
