Radish, Cucumber and Herb Salad

I’m looking outside and the sun is shining and there is no snow in sight – is spring finally coming?! This fresh and crunchy radish, cucumber and herb salad will convince you it is even if it is still 35° where you are like it is here. I’ve been really into adding radishes into recipes recently so I decided to make one where it’s more the star of the show! Plus I can’t not buy radishes when I pass them at the store – I just love the little bunches with their greens still on top. 😂😍

This recipe is so light and crisp and fresh – I think it would be the perfect addition to any Easter spread! And for everyone that doesn’t like to actually cook – this just requires some easy chopping and then tossing it all together! Simple!

Radish, Cucumber and Herb Salad
Prep Time

Ingredients
  • 1 large english cucumber
  • 1 bunch radishes
  • 1/4 cup feta
  • 1/4 cup red onion, thinly sliced and chopped
  • 1/3 cup fresh cilantro
  • 1/4 cup fresh mint
  • 1/4 cup fresh parsley
  • 1 tbsp extra virgin olive oil
  • juice of 1/2 large lemon
  • salt and pepper (to taste)
Instructions
  1. Peel cucumber if desired.

  2. Slice cucumber into thin rounds and then slice rounds in half.

  3. Thinly slice radishes.

  4. Finely chop all herbs.

  5. Combine all ingredients in a bowl and stir to combine.
