These yummy pretzel ice cream sandwich bites are a little sweet, a little salty, a little creamy and a little crunchy! Little bites of deliciousness that are very easy to make.
Come summertime, my motivation seems to be at an all time low. For a lot things. Work. Cooking/baking. Housework. Projects. I think it’s partly the heat. Partly just needing a break. A lot with having the boys home all day and just feeling like all attempts at work that is constantly being interrupted seems a little futile. So I try to give myself a break and not get too worked up about feeling like I’m not quite keeping up with well, everything. And I give myself permission to make super easy desserts like this and call it good. Because they are just that. Good. So you should give yourself a break too, make some of theses easy treats, and then sit and enjoy. Cause that’s what summer’s about, right?
We’ve got a video below so you can watch how easy these are to put together. You can use whatever ice cream strikes your fancy. I tried out three flavors, all in the name of work of course, peanut butter, maple syrup and caramel. All were fantastic, so if you’re unsure about what flavor to pick, go with one of those!
Ingredients for Pretzel Ice Cream Sandwich Bites:
- pretzel squares
- ice cream
- chocolate chips (for melting)

Pretzels filled with ice cream to make ice cream sandwiches, both sweet and salty, a perfect summer treat.
- pretzel squares
- your favorite ice cream (I used peanut butter, maple syrup, & caramel)
- chocolate chips, to melt for the chocolate drizzle

Place a small scoop of ice cream on a pretzel square.

Top with another pretzel square.

Repeat until you have as many as you want.

Place in freezer.

Microwave chocolate chips until they can be stirred smooth. (You can add a tiny bit of vegetable oil to the chocolate chips before microwaving to help keep them smooth).

Place in a ziplock baggie, cut off a small corner of the baggie and drizzle over pretzel ice cream sandwiches.

Place back in freezer until ready to eat.
