Another pretty drink for Valentine’s Day. This faux champagne is sweet, yummy and with the addition of strawberries – a perfect drink to sip this Saturday! While Caitlin has definitely gotten me hooked on more savory, less sugary mocktails with her delicious creations, I’ll still never pass up a sweet one! The boys were all about this drink, and all asked for their own glass after trying a sip of this, so it will definitely be a hit with kids!
Mock Strawberry Champagne
1 cup ginger ale
1/2 cup white grape juice
2-3 tablespoons strawberry simple syrup (recipe below)
Pour ginger ale into a tall glass, add white grape juice and strawberry syrup. Garnish with strawberries. Stir before drinking.
Strawberry Simple Syrup
1 cup strawberries, stems removed and chopped
1/2 cup water
1/2 cup sugar
Place sugar and water in a saucepan and heat over medium heat, stirring until sugar is dissolved. Add strawberries and gently mash. Remove from heat and let cool. Strain mixture into a jar, store covered in the refrigerator. (If your strawberry mixture isn’t red enough for you – it will be more pink than red, you can add a couple drops of red food coloring).
