I am a horrible meal planner and this is one of my favorite meals for oh-shoot-it’s-4:00-and-I-don’t-have dinner-plans. Which happens a bit too frequently round here.. It’s simple, so delicious and I almost always have the ingredients on hand.

Huevos Rancheros with Sriracha Sour Cream

Ingredients
1 egg
dash of milk
salt & pepper
1 corn tortilla [flour tortilla would work fine also]
1/4 cup cheese [cheddar, monterey jack, pepper jack, or whatever you prefer]
1/2 cup black beans, heated
2 Tablespoons salsa [or to taste]
1/2 avacado, sliced
optional additions: diced tomatoes, diced jalapeño, cilantro

Sriracha Sour Cream
1/2 cup sour cream
1 Tablespoon sriracha

.. Scramble your egg and dash of milk in a small bowl.
.. Heat a small skillet on medium heat on the stove with butter or butter spray. Warm the tortilla for about a minute, flip and warm the other side. Sprinkle cheese on the tortilla.
.. Slowly pour scrambled egg over the cheese and tortilla. It will spill over the edges, but don’t panic. Use a spatula and push the cooked egg to the center and pull the uncooked egg to the edge until it is firm enough to flip. Spinkle with salt & pepper to taste.
.. Flip the entire tortilla and egg over and cook for about 30 seconds.
.. Flip onto your plate and top with black beans, salsa [I like to mix the salsa in with the beans], avacado and whatever other delicious toppings you choose.
.. For the sriracha sour cream, simply mix the sriracha into the sour cream. You may use more or less sriracha according to taste. If you can, make this ahead and let it sit in the fridge and the flavor will come out more.
