While we still have asparagus popping up in the garden, I’ve been trying to use it in more recipes! I love summer rolls and these green veggie summer rolls are so satisfyingly crunchy and refreshing on a warm day! Pairing the summer rolls with peanut sauce with just the right amount of spice makes it absolutely perfect.
So last week I went out and picked some asparagus and chopped up some other fresh veggies I had in the fridge and rolled them up! I’ve made summer rolls for a few showers and parties in the past and they are always a hit. But making them on a random week day was such a treat! (My roommates thought so too! Ha!) I always think they’re going to be more difficult to make than they are even though I’ve made them a bunch of times. They’re honestly so easy – the longest part is just the chopping of the veggies! So if you love a nice easy, refreshing recipe that seems way more impressive than the effort required – this is for you!
Green Summer Rolls with Peanut Sauce Ingredients:
- asparagus
- avocado
- green cabbage
- green pepper
- cucumber
- cilantro
- jalapeno
- roll wrappers
- creamy peanut butter
- soy sauce
- rice vinegar
- sesame oil
- fresh lime juice
- brown sugar
- fresh ginger
- sriracha
- fresh garlic
- asparagus
- avocado
- green cabbage
- green sweet pepper
- cucumber
- jalapeno
- cilantro
- rice paper wrapper
- 1/2 cup creamy peanut butter
- 2 tbsp low sodium soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp fresh lime juice
- 1 tbsp brown sugar
- 1 tbsp sriracha
- 1 tbsp fresh ginger, grated
- 3 cloves fresh garlic, minced

Chop veggies into thin slices.

Follow instructions on wrappers to soften wrapper.

Fill with various veggies and roll up.

Chop in half if desired before serving.

Add all ingredients to blender/food processor.

Blend until smooth.
