I think chips & salsa are my favorite snack. Ever. We always keep that stash well stocked and I definitely have my favorite brands. It’s also my favorite part of dining at Mexican restaurants – all that fresh, delicious salsa and basket after basket of chips! Who needs to order anything else?! Well, maybe a side of queso wouldn’t hurt either…
So when I saw this recipe for cucumber salsa, it immediately went on my must make menu. I’m a sucker for any kind of dip. Especially a salsa dip.
This salsa is so refreshing & crisp…and perfect with all those garden vegetables that we’ll have coming in before too long around here! It’d be a perfect side dish to take along on a picnic or get together if you have any coming up this weekend! (How is it already Memorial Weekend?!!)
Cucumber Salsa
(Makes 2 1/2 cups)
2 cups finely chopped, seeded, peeled cucumber
1/2 cup finely chopped, seeded tomato
1/4 cup chopped red onion
1 jalapeño pepper, seeded and chopped (adjust to taste – if it’s really hot, you may not need to use the whole pepper)
1/4 cup minced fresh cilantro
1 garlic clove, minced
1/4 cup sour cream
1-1/2 teaspoons lemon juice
1-1/2 teaspoons lime juice
1/4 teaspoon ground cumin
1/4 teaspoon seasoned salt
salt & pepper to taste
In a small bowl, combine the first six ingredients. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt. Pour over cucumber mixture and toss gently to coat. Add salt & pepper to taste, stir. Serve immediately with chips.

Any fun plans for Memorial weekend? Any good food recipes you’ll be trying out? We’ll be headed up to the lake…where I wish I could say I’d be relaxing the whole time…but I have two work conferences coming up the following weekend, so I’m taking some work with me. (Ugh..and oops). But I am looking forward to seeing friends and having some down time amidst the craziness my work schedule brings this time of year!
