Did you know May 15th is National Chocolate Chip Day? I love these random food holidays…there seems to be one for almost everything!  I thought it would be fitting to share a recipe featuring the most popular way to enjoy chocolate chips – chocolate chip cookies!  But of course, this chocolate chip cookie had to be a little different….because I know you already have one too many perfect chocolate chip cookie recipes floating around your Pinterest boards!  One of my favorite cookies ever is S’mores Stuffed Chocolate Chip Cookies that Jenny from Picky Palate came up with. These combine two of my favorite things – chocolate chip cookies and s’mores.  And they are amazing. So I decided to adapt that recipe into a giant s’mores stuffed skillet cookie.  Marla introduced me to skillet cookies one girl’s night long ago and I was smitten!  And of course, I just had to add a layer of peanut butter to this.  Because, seriously, chocolate chips + peanut butter + s’mores = best.taste.ever.

This skillet cookie is so, so good. Like stop doing everything and make this right now good.  It’s perfect when it’s still warm from the oven and it’s oozing peanut butter and soft melty chocolate.  And it’s still so good after it’s cooled and you can slice it into bars.  But I highly recommend just grabbing a spoon and eating straight from the skillet!  And throw some scoops of vanilla ice cream on top too, because why not?!

Chocolate Chip Peanut Butter S’mores Skillet Cookie

2 sticks unsalted butter, softened
1 cup granulated sugar
3/4 cup packed light brown sugar
2 eggs
1 tablespoon vanilla
1 teaspoon salt
1 teaspoon baking soda
3 1/2 cups all purpose flour
2 cups semi-sweet chocolate chips
1 cup creamy peanut butter
1/2 cup graham cracker crumbs
5 (1.55 oz. size) Hershey Milk Chocolate Bars
1 1/2 cups mini marshmallows

Preheat oven to 350 degrees F. If your cast iron skillet is well seasoned you probably don’t need to grease it…if it’s not well seasoned or you want to be sure the cookie comes out easily, lightly grease your skillet.
In a stand or electric mixer, beat the butter and sugars until light and fluffy. Add eggs and vanilla, continue to beat until well combined. Add in the salt and baking soda, beating until mixed in. Gradually add in the flour, then the chocolate chips.
Press half of the cookie dough into the bottom of the skillet. Top with peanut butter (use an off-set spatula for easier spreading), graham cracker crumbs, chocolate bars (I broke mine into pieces and then placed them on) and marshmallows. Place remaining dough on top – I did this in pieces, flattening out small pieces in my hand and setting them on. The pieces can touch, but don’t have to, the dough will spread as it bakes.
Bake for 25 minutes or until the top is golden.

Also, I really seem to have chocolate chips on the brain because this morning while I was packing lunches, I asked Malacai if he wanted a peanut butter & jelly sandwich or a chocolate chip! Haa! He was a little disappointed when I corrected myself and told him the other choice was turkey…
