Once the weather starts turning a little cooler, I’m all about the comfort food – and hot, melty grilled cheese sandwiches are perfect for crisp fall days! This sandwich is like the warm, toasty version of the Fig, Bacon, Goat Cheese & Thyme Crostini Appetizers Caitlin shared last fall! They were a favorite of ours and you really can’t go wrong with pig & fig + a little goat cheese for good measure!

I made a couple sandwiches with fig jam and a couple with blackberry jam – just to try something a little different. Both were good, but the fig was definitely the favorite! But if you’re not a fan of fig, feel free to experiment with different jam flavors – just don’t go too heavy with the jam layer.

cooked, crispy bacon
fig jam (or a different flavor jam if you’d like)
goat cheese
good bread, sliced
butter

Spread the inside of bread slices with a thin layer of fig jam. Top each slice with a generous layer of goat cheese.  Place 3 pieces of bacon on one sandwich half, close sandwich, butter the outside of top & bottom of sandwich and cook on a flat skillet over medium low heat until golden.

What are some of your favorite fall comfort foods? I’m looking forward to more grilled cheese sandwiches (we have a whole post dedicated to different grilled cheese sandwiches if that’s your thing!), apple crisp, soups and hot apple cider!
