Rhubarb season is upon us! And we’ve definitely been eating our fair share of rhubarb around here! We’ve been trying out some new recipes using rhubarb and this lemonade was one of our favorites.
Rosemary Rhubarb Lemonade
2 cups of chopped rhubarb
3/4 cup water
3/4 cup sugar
1-2 sprigs of rosemary
2/3 cup fresh lemon juice
water
ice
Put rosemary, rhubarb, water and sugar mixture in a sauce pan and bring to a boil. After it has boiled for a minute or so, reduce and let simmer for 5-10 minutes. Strain mixture and combine with the lemon juice. Add a few cups of water/ice depending on how strong you want your mixture. Garnish with lemon slices and/or rosemary.
