Cucumber Mint Gazpacho

I was at a restaurant last month and saw a cucumber mint gazpacho listed as their soup of the day. I rarely try new things at restaurants because I’d rather stick with things that I know I’ll love. (I know, I’m boring!) But the cucumbers/mint combination caught my eye so when I got home, I immediately started looking up recipes because I was so curious – and last week I finally made some! It’s a nice refreshing treat for summer. Cucumber Mint Gazpacho @themerrythoughtCucumber Mint Gazpacho

1 Large Cucumber – peeled, seeded, and chopped
1 Small Green Bell Pepper – chopped
1/2 Avocado – chopped
Small Bunch of Scallions (I used 2 long pieces) – chopped
1/2 Jalapeño – chopped (Adjust to taste)
2 Garlic Cloves – minced
A Few Sprigs Of Mint (4+ leaves) – roughly chopped
Juice of 1/2 Lime
1 Tbsp Red Wine Vinegar
5 oz Plain Greek Yogurt (or Regular Natural Yogurt)
Salt & Pepper to taste

Add all ingredients to a food processor and blend until smooth.
