Cottage Cheese Flatbread – Protein Wrap

Cottage cheese flatbread is made with just 4 ingredients and is a flourless, high protein bread substitute! 

Happy 2025! Still can’t believe that I’m writing 2025 for the date! We had such a nice Christmas break. Busy, but so nice to be with family and friends. And eat so much delicious food…which is why I’m now sharing something healthy. Because if your December looked anything like mine, you’re needing a little break from the excess of sugar & carbs!

I sadly have a hard time with carbs – I can’t eat too much without feeling sick from it. So I’m always looking for recipes that can be bread substitutes, without needing to buy special ingredients. This cottage cheese flatbread happens to have the added bonus of being protein packed as well. (Lately I can’t get on the internet without being bombarded with how much protein I should be eating!).

My favorite way to eat this is to cut it up into wedges, so it’s more like pita bread. Then I can dip it in hummus or just add toppings for a bite size snack. This is also delicious with whipped feta, so you should probably make some of that too!

Ingredients in Cottage Cheese Flatbread:

  • cottage cheese
  • eggs
  • grated cheese
  • seasonings

Tips for making it:

  • You can use whatever type of grated cheese you like. Parmesan goes well in this. I used a cheddar parmesan mix recently and that was really good. You also don’t need to add cheese if you don’t want (but that would be silly, right?).
  • You want this to be thin when you spread it on the parchment paper. If it’s too thick, it won’t bake up correctly and might be a little mushy.
  • You also want to be sure to bake this long enough. Make sure it’s really golden brown when it’s done.
  • You can add whatever seasoning you like. I like to switch it up a little. I also add red pepper flakes to it sometimes for a nice spicy kick!
  • Cottage cheese flatbread isn’t the easiest to store. I keep mine in an airtight container and I like to put it in the air fryer for a few minutes before eating, just to crisp it up a little (it can feel a little mushy after storing it). You should probably eat it within a day or two though.

Cottage Cheese Flatbread – Protein Wrap

Cottage cheese flatbread is made with just 4 ingredients and is a flourless, high protein bread substitute.

Ingredients
  • 1 cup cottage cheese
  • 2 large eggs
  • 2 tablespoons grated cheese (like parmesan)
  • 1 teaspoon Italian seasoning (or seasoning of choice)
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
Instructions
  1. Preheat oven to 350ºF.

  2. Line small baking sheet (about 9×13 size) with parchment paper.

  3. In food processor, blend ingredients until smooth.

  4. Pour onto parchment paper, spreading into a thin, even layer. If you're using a small baking pan, it should almost fill the pan.

  5. Bake for 30-35 minutes, or until golden brown.

  6. Remove from oven and allow to cool completely.

  7. Fill with your fillings of choice & enjoy.
