When I first stumbled across the Copa Verde cocktail recipe, it reminded me of a glass full of green slime – Nickelodeon style. I had serious doubts about how it would taste but it looked interesting enough that I wanted to try it anyways. And I’m so glad I did – this stuff is amazing. No joke. If you like limes and avocados – this is your drink.
Copa Verde Mocktail
Ingredients
1/2 Avocado
1/4 Cup Water
1 Fresh Squeezed Lime
1/4 Cup Agave Nectar
Sugar
Thyme
Ice
Club soda
Dampen the rim of a small glass with agave nectar and dip in mixture of sugar and thyme. (**If you want to be authentic, use salt instead of sugar – I just couldn’t do it!)
Combine avocado, water, lime, and agave nectar in a blender and blend until smooth.
Pour mixture into a cocktail shaker with ice and shake until cool.
Pour mixture into glass.
Add desired amount of club soda. (2-4 tbsp depending on how thin you want the drink.)
Stir and drink.
Of course, if you want the real deal, you can substitute the club soda for some tequila. But I could honestly just freeze the original blended mixture before the club soda and eat it every day. It’s just that good!
