These are one of my favorite treats! They are quick and easy to make and so, so good.  I found this recipe a few years ago via Pinterest and I’ve been making them regularly ever since.  I had this posted on my old blog – but it’s definitely one worth sharing here too – because you need these in your life.  If you’re one who bakes and shares during the holiday season, I definitely recommend adding these to your treat list – your friends will thank you!
I usually double this recipe and make it in a 9×13 pan – they go quickly. That combination of white chocolate and peanut butter is too good to resist.

12 oz bag of white chocolate chips
drizzle of vegetable oil
1/4 cup creamy peanut butter
3 cups Rice Krispies cereal {generic brand is fine too!}
1 1/2 cups mini marshmallows
1/4 cup mini chocolate chips + 2 Tbsp for garnish

Lightly grease a 9×9 pan {or 8×8 if you prefer thicker bars}.

Pour the white chocolate chips into a medium microwave-safe bowl, drizzle with a little bit of vegetable oil (about 1/2 tsp.), stir to coat chips. Heat on medium power for 1 minute. Stir and continue in 30 second increments until the chips are completely melted.

Add the peanut butter to the melted chocolate and stir until completely combined.

Stir in the rice krispies, then the mini marshmallows. Allow mixture to cool slightly, stirring occasionally. (If you add in your mini chocolate chips too soon, they will be melty – which is fine, but just know that’s why you’re letting it cool slightly. I usually wait about 3 minutes before adding my chips). Add the mini chocolate chips and stir to combine.

Pour the mixture into the prepared pan and spread evenly, pressing lightly with the back of your spoon, but not too hard. Press the remaining chocolate chips into the top for garnish.

When the bars are completely cooled, cut into squares and enjoy! (Feel free to stick in the fridge – or out on the porch if it’s freezing where you are – to speed up the cooling process)
