I could add cilantro to basically everything I eat and be thrilled with it. (Like this ice cream!) Occasionally I even use leftover cilantro to infuse my water! Cilantro just makes everything better and these fries are no exception. These are so delicious fresh out of the oven!Garlic Cilantro Fries
5 medium potatoes, washed and cut into thin fries
3 tbsp olive oil
3/4 tsp sea salt, possibly more to sprinkle on afterward
Pepper, to taste
3 cloves garlic, minced
1/4c cilantro, finely chopped
Preheat oven to 425. Cut fries and soak in cold water. Mix oil, sea salt, pepper and garlic in a large bowl. Drain the water and dry the fries with paper towel. Toss fries in the bowl with oil mixture. Place on a baking sheet in a single layer. Roast for 30-35 minutes, flipping halfway through. Toss hot fries in fresh cilantro. Serve immediately.
*Add parmesan cheese if desired.
