Happy Monday! I’m camping up in the mountains right now – so for me, it is a happy Monday! I spent the day yesterday swimming in the lake, soaking up sunshine and enjoying fresh mountain air! (Lest you be too jealous, we also experienced one of the fiercest rain/thunderstorms I’ve ever lived through…while sleeping in a tent! And we’re being woken up quite a few times throughout the night for bathroom trips for little boys…)
Pineapple is one of my favorite fruits and since summer season is in full swing, I thought I’d try out some grilled pineapple in a mocktail. This drink is sweet and delicious! Of course, you can always skip out on the grilled pineapple if you didn’t want to take the time for that and it would still be great, because, c’mon it’s pineapple…you can’t go wrong with that!
Grilled Pineapple & Lime Mocktail
½ cup grilled pineapple
2 tbsp lime juice
1 tsp honey
2 tbsp. sparkling orange juice
Blend together first 3 ingredients in a food processor or blender. Pour over glass filled with crushed ice. Add the sparkling orange juice and top off with club soda. Stir. Garnish with grilled pineapple slice.
For the grilled pineapple:
2 tbsp honey
1 tbsp fresh lime juice
1 tsp ground cinnamon
1 ripe pineapple, cut into rounds
In a small bowl, combine the honey, lime juice, and cinnamon and whisk to blend. Set aside. Remove the husk from the pineapple and slice into 1-inch thick rings, and place on a preheated grill. Baste slices with marinade while cooking. Cook 4-5 minutes each side until nicely caramelized. Transfer the pineapple to a bowl and place in the fridge until cold.
