Whipped Feta with Roasted Tomatoes

Creamy whipped feta topped with savory roasted tomatoes and herbs.

Ingredients

For the Roasted Tomatoes:

  • 3 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 1 clove garlic, minced
  • 2 teaspoons fresh thyme leaves
  • salt & pepper, to taste

For the Whipped Feta:

  • 6 ounces crumbled feta
  • 2 ounces cream cheese softened
  • 1 small clove garlic minced
  • 2 tablespoons olive oil
  • salt & pepper to taste

For Garnish & Serving:

  • fresh basil & thyme
  • crostini, pita bread, and crackers

Instructions

For the Roasted Tomatoes:

  1. Preheat oven to 400ºF.
  2. Place 3 cups cherry tomatoes in an oven safe baking dish and drizzle with 3 tablespoons olive oil, 1 clove minced garlic, 2 teaspoons fresh thyme leaves, salt and pepper.

  3. Toss to coat.
  4. Bake for 20-25 minutes, until tomatoes are starting to blister and burst.
  5. While tomatoes are roasting, make the whipped feta.

For the Whipped Feta:

  1. In a food processor, whip together 6 ounces crumbled feta, 2 ounces cream cheese, 1 small clove garlic, 2 tablespoons olive oil and salt & pepper.

  2. Blend until smooth and creamy, about 3-5 minutes, scraping the sides of the bowl as needed.
  3. Spread feta onto a platter or serving dish.
  4. Top with roasted tomatoes (be sure to include some of that delicious seasoned oil).

  5. Garnish with fresh herbs like basil and thyme. Serve with crostini, pita bread, or crackers.
