Delicata Squash with Whipped Goat Cheese

Ingredients

Roasted Delicata Squash

  • 2 delicata squash, sliced in 1/2” thick circles, scrape out seeds
  • 2 tbsp evoo
  • 1 tsp salt
  • 1 tsp pepper

Whipped Goat Cheese

  • 10 oz goat cheese
  • 4 oz cream cheese
  • 1 clove garlic, minced
  • 1 1/2 tbsp fresh lemon juice
  • 1 tbsp evoo
  • pinch salt

Toppings

  • pomegranate seeds
  • fresh thyme
  • honey

Instructions

Roasted Delicata Squash

  1. Preheat oven to 425°.

  2. Toss rings in EVOO, salt, and pepper.

  3. Line baking sheet with parchment paper.

  4. Arrange rings in a single layer.

  5. Roast for 25-30 minutes, flipping halfway.

Whipped Goat Cheese

  1. Combine all ingredients in food processor, pulse until smooth.

Finish It Up

  1. Pipe whipped goat cheese onto the delicata squash.

  2. Drizzle with honey.

  3. Add pomegranate seeds and fresh thyme.

  4. Serve immediately.
