Ingredients

  • 8 ounces goat cheese
  • 3 tablespoons flour
  • 1 large egg
  • 1/2 - 3/4 cup Panko bread crumbs
  • salt & pepper to taste
  • hot honey, optional
  • fresh herbs, optional

Instructions

  1. Divide the goat cheese into 16 pieces and gently shape into balls. Place in freezer for about 20 minutes.
  2. Preheat oven to 400ºF. Line small baking sheet with parchment paper.
  3. In three separate bowls, place your flour, egg, and panko bread crumbs.
  4. Beat the egg lightly with a fork.
  5. Add a bit of fresh ground salt & pepper to panko crumbs and stir to mix.
  6. Roll a goat cheese ball in the flour, completely coating.
  7. Next roll the cheese ball into the beaten egg, coating completely again.
  8. Finally, roll the cheese ball in the Panko bread crumbs, completely coating.
  9. Place cheese ball on parchment lined baking sheet.
  10. Repeat with remaining goat cheese balls.
  11. If desired, spray with a light coat of olive oil cooking spray for extra crispiness.
  12. Bake at 400ºF for 12 minutes, or until golden brown. (If they’re not quite browned enough, you can turn the oven to broil for a minute or two).

  13. If desired, drizzle with hot honey (or just regular honey), and garnish with fresh herbs.
