If you’re looking for a delicious dish to bring to Easter brunch, you need to try this one out. It’s so good! I’ve made it a few times while coming up with the recipe and then to take photos for this post and it’s safe to say I love it. I mean, it’s topped off with warm goat cheese and crispy bacon, so I’m not sure how someone could not love it! Plus if you make an entire package of bacon, you’ll have a bunch leftover to eat while this is in the oven. 😉
Spinach, Bacon, and Goat Cheese Egg Skillet
1 Tbsp Butter
1 Clove Garlic
12-16 oz Fresh Spinach
1/3 Cup Heavy Cream
Salt & Pepper
3-5 pieces of Bacon
1-2 oz of Goat Cheese
Cook bacon until crisp – I usually bake them at 400 degrees for 15-20 minutes.
Turn oven to 450.
Heat the butter in a medium skillet over low-medium heat. Add garlic to the skillet. Slowly add spinach. Allow to cook 5-10 minutes until spinach is soft.
Add cream and salt and pepper to taste. Bring to a simmer then remove from heat.
Make little nests for eggs and crack one into each spot.
Bake for 10-15 minutes.
Add crumbled bacon and goat cheese and bake for another 5 minutes or until egg whites are set.
