Mocktail Monday // Cherry Lime Refresher

Oh Monday morning!  I’d like my weekend to just keep on going…my little sister, my brother and his girlfriend were all home and if we could just keep the weekend and those three around for a bit longer, I’d be pretty happy! (However the stomach bug I woke up with in the wee hours of yesterday morning can hightail it out of here!) But alas, Monday morning has arrived…
Also arriving around these parts – cherry season!  One of my childhood memories of sweet cherries was having handfuls and handfuls of them at the 4th of July family reunion at my uncle’s pond.  We then would have cherry pit spitting contests – who could spit their pit the furtherest…oh so classy!  To celebrate sweet cherry season, some kind of cherry mocktail was in order.  (You’ll be seeing a lot of fruity mocktails over the next few weeks…we get giddy about all the abundant fruit during the summer season!)  This drink is sweet, tangy and so refreshing on hot summer afternoons.

Cherry Lime Refresher

12 fresh cherries, pitted
2 tsp. honey
1/4 cup cranberry juice
3 tbsp fresh lime juice
ice
club soda
lemon-lime soda

In a cocktail shaker or mason jar, muddle cherries with the honey. Add the cranberry juice, lime juice and ice. Cover and shake for 30 seconds – 1 minute. Strain into tall glass, fill remainder of glass with equal parts club soda and lemon-lime soda. Stir. Garnish with lime.

    This looks so delicious! I have juiced a bunch of fruits and veggies but never thought of using cherries, will definitely be trying this out!
