Greek Artichoke Salad

I’ve been trying to find more veggie based meals to eat that don’t take much time or prep work. And this Greek artichoke salad is just right! I loveee artichokes and I will chop them up and put them on salads or just soak them in some Greek or Italian dressing and snack on them whenever I open the fridge. I definitely don’t get into the cooking of the artichokes. I just can’t be bothered with that time consuming part when I like the canned just fine. But do whatever you prefer!

I don’t do much meal prepping, but I think this recipe would be a lunch option to meal prep. Just keep the dressing on the side! You could toss this with some chopped lettuce or pasta or add some chicken if you want also. If Greek Artichoke Salad isn’t for you, here’s one of my other favorite Greek-style recipes!

Greek Artichoke Salad
Prep Time

Course: Main Course, Salad, Side Dish
Ingredients
  • 2 cans quartered artichoke hearts, drained and patted dry
  • 1 can chickpeas, drained and rinsed
  • 1 english cucumber, sliced
  • 1/4 red onion, chopped
  • cherry tomatoes, halved
  • feta
  • basil, chopped
  • greek dressing
Instructions
  1. Strain and chop ingredients as necessary.

  2. Mix all ingredients.

  3. Toss in dressing before serving.
