Checkerboard Charcuterie

Everyone is loving the watermelon and feta tetris salad trend this year. I’ve seen a bunch of variations popping up lately. There are so many fresh fruits and veggies growing in our area right now so I decided to try to make my own checkerboard charcuterie version of this trend! I LOVE it. I mean, I’m a sucker for any charcuterie board but THIS?! Almost too cute to eat. Almost.

I love that you could do this trend with a bunch of different types of summer salads or you can make a big hodge-podge charcuterie version like this. The chopping into squares is a bit time consuming but it’s totally worth it!

Ingredients for Summer Checkerboard Charcuterie:

  • watermelon
  • mango
  • kiwi
  • raspberries
  • feta
  • brie
  • aged cheddar
  • almonds
  • cashews
  • olives
  • fresh herbs – I used thyme and nasturtium
  • fresh citrus – to squeeze over everything
  • flaky salt
  • extra virgin olive oil – to drizzle on top
  • skewers for serving

You can add in meats or whatever you prefer – customize it however you’d like!

Checkerboard Charcuterie
Ingredients
  • watermelon
  • mango
  • kiwi
  • raspberries
  • feta
  • brie
  • aged cheddar
  • almonds
  • cashews
  • olives
  • fresh herbs (I used thyme and nasturtium)
  • fresh citrus (lemons and limes)
  • evoo
  • flaky salt
  • skewers
Instructions
  1. Cut up ingredients into 1" squares.

  2. Arrange on cutting board into a checkerboard pattern, alternating items used.

  3. Add herbs as garnish.

  4. Drizzle with evoo and/or wedge cut citrus.

  5. Serve with skewers for easy serving.
