Rice Krispie Treat Ghosts

Course Dessert

Ingredients

Rice Krispie Treats:

  • 10-16* ounces marshmallows (can be mini or regular)
  • 6 cups rice krispies cereal
  • 4 tablespoons butter

White Chocolate Coating:

  • 2 cups white chocolate chips
  • 2 teaspoons vegetable oil
  • semi-sweet chocolate chips

Instructions

For Rice Krispies Treats

  1. Line a 9x13 pan with parchment paper, spray lightly with cooking spray.

  2. In a large bowl microwave safe bowl, heat marshmallows and butter for 2 minutes. Stir.

  3. Heat 1 more minute. Stir until smooth.

  4. Stir in rice krispies until completely coated.

  5. Pour into prepared pan and press into an even layer. (I save the wrapper from the butter and lightly spray it with cooking spray, and use that to press the rice krispies).

  6. Cool until set.

For White Chocolate Coating

(I like to do my chocolate in half batches, easier to deal with, so that's how my steps are written out...)

  1. Pour 1 cup of white chocolate chips and 1 teaspoon vegetable oil into a microwavable bowl, stir to coat chips with oil.

  2. Microwave 1 minute, stir. At this point you might be able to stir until chips are completely melted and smooth, or you may need to stick it back in for 20 seconds.

  3. Microwave in 20 second intervals until the chips can be stirred completely smooth. Make sure not to over heat this though, or it can ruin the chocolate.

Dipping

  1. Cut rice krispies into rectangles. (I find it easiest for dipping to start with slightly longer rectangles, not dip the entire bar, then cut off the bottom after set).

  2. Cut one end of rice krispie treat into a rounded shape. You shouldn't need to cut very much off to do this.

  3. Dip rice krispie treat into white chocolate, I use a spoon to help cover.

  4. Place on wax paper to cool.

  5. Before the chocolate has set, place semi-sweet chips on as the eyes and mouth.

  6. Once rice krispie treat has completely cooled, you can cut off the bottom that did not get dipped, or leave as is.

Recipe Notes

*You can just use a 10-ounce bag of marshmallows, and that's fine. But to make them really good, add extra marshmallows (it is soo much better!). Normally I just throw a bit extra in from an open bag, but I just found out they sell 16 ounce bags now!
