Raspberry Thyme Spritzer @themerrythoughtIt’s been a while since I’ve made an herb-y mocktail and I’ve missed them! I was craving one like crazy last week with all the sunshine I soaked up while on vacation so I decided to use some raspberries that were leftover from making pies to make a refreshing summer mocktail!

2 Tbsp Sprite
2 Tbsp Raspberry Syrup
2 tsp Thyme Syrup
Ice
Club Soda

Fill glass half full of crushed ice. Add Sprite, raspberry syrup, and thyme syrup. Top off with club soda and garnish with raspberries and thyme sprig.

To make the thyme syrup, combine 1/2 cup water, 1/2 cup sugar, 6+ sprigs of thyme in a saucepan over medium heat. Bring to a boil, or until sugar is completely dissolved, stirring occasionally. Remove from the heat and let infuse for 10 minutes. Strain out thyme, transfer liquid into a jar, and let it cool completely.

To make the raspberry syrup, combine 1/2 cup water, 1/2 cup sugar, 1 cup raspberries in a saucepan over medium heat. Bring to a boil, or until raspberry are mushy and broken up, stirring occasionally. Remove from the heat and let infuse for 10 minutes.
