Back in June we went to Portland, Maine for a friend’s wedding. While we were there, we stopped at the Catbird Creamery where I had some of the most delicious ice cream!  One of the flavors I tried was Brown Sugar Vanilla (on a homemade cone!) and I loved it.  Then, recently I stumbled across these ice cream sandwiches that Jeni’s makes (ugh, we sadly have no Jeni’s around here and I’ve been dying to try some of that ice cream!) and I knew I had to combine the brown sugar ice cream with oatmeal cookies because those are two of Mike’s favorites.  So these little gems are for my love.  And it’s pretty much a perfect pairing…brown sugar vanilla ice cream was made to top oatmeal cookies!

Brown Sugar Vanilla Ice Cream

2 cups whole milk
1 cup heavy cream
1 ¼ cup brown sugar
1 vanilla bean
1 teaspoon pure vanilla extract
5 large egg yolks

In a large saucepan, whisk together the milk, heavy cream, brown sugar and vanilla extract. Cut the vanilla bean in half length-wise and scrape out seeds; add those to the saucepan along with the empty vanilla bean pod. Heat over medium heat until very hot, but not boiling. In a separate bowl, gently whisk egg yolks. Slowly pour about 1/2 cup of the hot milk into the yolk mixture, whisking constantly, this gently warms the egg yolks (so they don’t become scrambled eggs!). Keep adding the milk slowly, constantly whisking, until you have about 1/2 of the hot milk mixture stirred into the eggs yolks. Pour the egg mixture back into the pan with the remaining milk and heat over medium heat, stirring, until the mixture reaches 165-170ºF. Remove from the heat and strain through a sieve into a large bowl. Let cool to room temperature (you can set the bowl in an ice bath to speed up the cool down process), cover and refrigerate overnight.  The next day, churn the ice cream mixture in your ice cream maker.  Freeze for a few hours or until hard.

Oatmeal Cookies

1 stick butter
½ cup brown sugar
¼ cup sugar
1 egg
1 tsp vanilla
1 cup AP flour
½ tsp baking soda
½ tsp cinnamon
¼ tsp salt
1 ½ cups oats (quick or old-fashioned, uncooked)

Preheat oven to 350º. In a large bowl, beat butter and sugars on medium speed with an electric mixer until creamy, 2-3 minutes. Add egg & vanilla, beat well. Add flour, baking soda, cinnamon and salt; mix well. Add oats, mix well. Drop by rounded tablespoons onto baking sheet lined with parchment paper (or ungreased) cookie sheet. Bake 8-10 minutes or until light golden brown. Cool on pan for a few minutes, remove to wire rack and cool completely.

Cookies adapted from Quaker Oats

To make ice cream sandwiches: place a scoop or two of the ice cream on the bottom side of one of the cookies. Top with another cookie.
