Blue Cheese Balsamic Potato Chips

These blue cheese balsamic potato chips are an easy appetizer with potato chips and blue cheese, warmed in the oven, and then drizzled with balsamic glaze.

I came across this viral “chippy boy” recipe while browsing on Pinterest. Since I’m fan of chips and blue cheese and balsamic vinegar, I was intrigued. So I immediately began googling to figure out what this recipe was all about. 

Turns out, it’s actually not a new recipe created by someone on TikTok as some sources stated. It’s been around since the late 1900s, as the kids like to say – haha! There was a restaurant down in Georgia that started serving something similar in the late 80’s. And it seems like it’s been a popular appetizer at restaurants for a number of years. (Although I’ve never seen it myself on a menu). A lot of sites have been featuring variations of this recipe since then. I found a recipe in a forum from 2009. So yes, these “chippy boys” have been around long before TikTok made them viral. It seems like that’s just where the chippy boy name came from.

But no matter where or when this recipe came from – it’s definitely something you need to make. Because these are so good! And of course they’d be a perfect game day snack if you’re looking for more Super Bowl recipes

This recipe is for those times you feel like doing a little more than just opening a bag of chips, but you just can’t quite summon the energy to do a lot more than that. It’s so incredibly easy to make. 

You can customize this recipe to your liking. Use your favorite brand of potato chips and even try different flavors of chips. I did a batch with the Kettle salt & vinegar chips and really liked that. Use different varieties of cheese – I know blue cheese can be a turn off for some (what?!), so try it with something you like. Feta or goat cheese would be good choices. I even added sliced cherry tomatoes to a batch and loved it that way, see below. Sounds weird, but it’s actually so good. So feel free to get creative with this recipe!

Blue Cheese Balsamic Potato Chips

These blue cheese balsamic potato chips are an easy appetizer with potato chips topped with blue cheese, warmed in the oven, and then drizzled with a balsamic glaze.

Course: Appetizer, Snack
Ingredients
  • thick cut potato chips (kettle cooked chips work well)
  • blue cheese or gorgonzola cheese*, crumbled
  • balsamic vinegar glaze
Instructions
  1. Turn oven to broil.
  2. Line a small baking sheet with parchment paper.
  3. Arrange chips on pan.
  4. Sprinkle with crumbled cheese.

  5. Broil for 3-5 minutes, watching closely. The chips should turn a little more golden and the cheese should look soft and slightly melted.

  6. Remove from oven, drizzle with balsamic glaze.
  7. Serve immediately.

Recipe Notes

*Substitute a favorite cheese like feta or goat cheese.
