Tomato, Basil & Burrata Grilled Flatbread with Avocado

Today’s post is just one more example of me struggling with keeping it together with work over the summer…seriously, I don’t know what is going on with me! I’ve been really excited about sharing this recipe, I’ve had the ingredient list just sitting on my desk for weeks, making me hungry every time I sit down and look at it. I finally get around to making it to share here, photographed it, cleaned up my mess, sat down to enjoy it, and realized I forgot to put the balsamic glaze on it before I took the pictures. 😩 So you’ll see balsamic glaze listed in the ingredients, but it is missing from the flatbreads in these photos. I guess the upside to it is at least I remembered before I ate it, so I got to enjoy it in it’s full glory. Which is most important. Just don’t be like me and forget it for yours! Although Mike had eaten quite a bit of it before I realized I had forgotten to put it on and said it was good even without it.Tomato, Basil & Burrata Flatbread with Avocado @themerrythoughtA while back Caitlin introduced me to one of my new favorite food loves – burrata! She’ll sometimes bring it to our meetings and serve it up for a quick, delicious lunch. Ever since my first bite, I’m always looking for new ways to enjoy it. (It is a little on the pricey side, so that usually means my tastings are few and far between).
Grilled flatbreads are a favorite during summer months and since this one includes a bunch of my favorite things, I thought adding in burrata cheese would be the perfect blend…and it is! garlic flatbread
olive oil
8 ounces burrata cheese, sliced into chunks (this is enough for 2 flat breads – just use 4oz. for one)
tomatoes, sliced
avocado, sliced
fresh basil, chopped
salt & pepper
balsamic glaze (I use this one)

Brush both sides of flatbread lightly with olive oil. Grill flatbread over medium heat until lightly charred on both sides. Layer on the burrata, tomatoes, avocado and basil. Grill over medium heat until cheese is melted. Top with additional basil if desired and salt & pepper to taste.
