Roasted Red Pepper Hummus

One of my favorite restaurants to go to is a Mediterranean restaurant with the most delicious hummus appetizer. Every time we eat there I think to myself, I need to make hummus at home more! This recipe is so easy to make and seriously delicious and creamy.

Roasted Red Pepper Hummus
1 can chickpeas [15oz]
1/2 cup tahini
1 roasted red pepper [or a 4oz jar]
2 tablespoons fresh squeezed lemon juice
1-2 cloves garlic, pressed or minced [depending on taste. I say 2!]
1/2 teaspoon ground cumin
1/2 teaspoon paprika
3/4 teaspoon salt, or to taste
2 tablespoons water

Drain chickpeas and blend in food processor. Add the tahini, roasted red pepper, lemon juice, garlic and spices and blend until pureed. Add in the water a little at a time until you get a nice smooth and creamy texture, using more or less if needed. Refrigerate for an hour and serve at room temperature if possible.

Drizzle with olive oil and serve with pita chips or veggies. Such an easy and yummy snack. Enjoy!
