Creamy Cucumber Salad

We’re still working away on my cousin’s new house that I’ll be moving into soon! I’m actually heading out to pick up some new floors today! Until that’s ready for us, I moved in with my aunt and uncle because I had to be out of my apartment. One of the many perks to living with them is that they have amazing gardens all around their house. Gorgeous flowers, fresh herbs, veggies, huge raspberry bushes… needless to say, I’ve been going out and snagging a few snacks every day. It has me so excited to have a garden of my own next year! Since I have so many fresh veggies at my fingertips, I’ve been trying out simple recipes using some of what they have in the gardens. To prove that milkshakes aren’t the only thing we’ve been eating lately, I decided to share some of the recipes I’ve been trying out!Creamy Cucumber Salad @themerrythoughtCreamy Cucumber Salad
4 medium sized cucumbers
1/2 cup sour cream
Juice from 1/2 lemon
2 small garlic cloves, pressed
1 Tbsp fresh dill, chopped
Salt and pepper, to taste

In a medium bowl, combine sour cream, lemon juice, garlic, dill, salt and pepper.
Slice cucumbers into thin half rounds. Add to mixture and toss to coat evenly.
Serve immediately or refrigerate up to 8 hours.
