Baked Rosemary & Garlic Brie with Roasted Potatoes

A few years ago I saw a friend dipping roasted fingerling potatoes into a pile of cheesy goodness while we were out at a restaurant. Every time I  passed by the fingerling potatoes at Wegmans after that I would make plans to try to recreate it. While I was getting ready to finally put this together last week, I realized that I wasn’t actually sure of anything that was in that dish – I never asked or looked up what it was at the time. So I just grabbed the potatoes and brie and put something together!. And surprise, surprise… dipping potatoes in cheese is delicious. Haha! And it’s a little bit fancier than my normal Arby’s french fries dipped in cheese sauce, so I’m feeling pretty good about myself. (Also just need to note that some of these potatoes were purple so I did not completely burn the ones that look super dark… hahah!)Baked Rosemary & Garlic Brie with Roasted Potatoes @themerrythoughtRoasted Potatoes with Brie

Roasted Potatoes
-1 lb fingerling potatoes
-1 tbsp salt
-1/4 tsp baking soda
-3 tbsp extra virgin olive oil
-1 clove garlic, crushed
-rosemary

(I was trying to make them extra crispy so I tried the parboiling technique.) Preheat the oven to 450ºF. Cut potatoes in half lengthwise. Add potatoes to saucepan and cover with water by 1 inch. Add 1 tbsp salt and 1/4 tsp baking soda to the water. Bring to a boil over high heat, then reduce to a simmer, and cook until exteriors are tender. This should take 7-10 minutes. There should be a little bit of resistance when poking the potatoes with a knife. Drain potatoes and leave to dry for 3 minutes. Combine 3 tbsp extra virgin olive oil with some fresh rosemary, 1 clove of crushed garlic, and salt and pepper in a sautée pan and heat over medium heat until garlic is golden brown. Toss the potatoes in the oil mixture – shake it around vigorously to coat the potatoes in a layer of potato/oil paste. Spread potatoes evenly across a baking sheet and roast for 15 minutes, or until bottoms are lightly golden. Flip potatoes then let roast for another 15 minutes or until second side is golden. Transfer to a bowl and enjoy!

Rosemary Garlic Brie
-1 wheel of brie
-1 garlic clove, crushed garlic
-few springs of rosemary
-extra virgin olive oil

Preheat the oven to 350ºF. Add olive oil, rosemary, and 1 clove of crushed garlic to a sautée pan and heat over medium heat until garlic is golden brown. Slice off the top rind if desired. Place cheese on baking sheet lined with parchment paper. Drizzle oil mixture over the brie.
