Artichoke Bread

This recipe is another one of our favs that shows up on our party menus again and again. A while back, our cousin, Victoria, hosted a get together at her house and served this amazing appetizer. We couldn’t get enough of it – a creamy, cheesy artichoke spread on crusty bread, baked up and served warm and crispy.   Thankfully she shared the recipe with us. We’ve been making it (a lot) ever since.
Not only is this delicious, this appetizer is quick and easy to make, which makes it a great addition to your party menu.


Artichoke Bread | The Merrythought
ARTICHOKE BREAD

1 can artichokes, drained & chopped
1 cup mayonnaise
1 cup grated parmesan cheese
1 clove garlic – minced
1 loaf of Italian or French bread, sliced length-wise

In a medium size bowl, mix the first four ingredients until combined. [Tip: for an extra smooth texture, toss the artichokes in the food processor.] Spread the mixture on the sliced bread. Bake at 350º for 20 minutes or until golden brown. Let cool for a few minutes, then slice into wedges. Serve warm.
