10 Grilled Cheese Sandwiches

Let’s forget about the fact that warm weather may (or may not – where are you spring?!) eventually make it’s way here and that we might sometime soon need to be shedding some layers and showing some skin and that we’re trying to get in tip-top shape for such an occasion. Instead, let’s celebrate that April is National Grilled Cheese month by consuming various forms of grilled cheese all day, every day! Slather on that butter, pile on that cheese and just celebrate the sandwich! Or maybe if that’s a little too much for you, you can celebrate National Grilled Cheese Sandwich Day – April 12th – and eat sandwiches for the day.
Since the entire month of April is dedicated to celebrating grilled cheese, we thought it would be fitting to host another food get together and come up with some delicious grilled cheese sandwiches to inspire you with! Of course there’s nothing wrong with the classic grilled cheese filled with only ooey-gooey melty cheese, but with so many options out there, why not get a little creative with your sandwich?! Here are 10 ways you can enjoy grilled cheese sandwiches this month:
Breakfast Bagel Grilled Cheese @themerrythought
Breakfast Bagel Grilled Cheese – start out the morning with a delicious grilled cheese bagel. Slice a thin layer off the top and bottom of the bagel (we recommend an everything bagel), butter the top and bottom and place butter side down on a skillet over medium low heat. Place slices of sharp cheddar on both sides and cook (open face) until outsides are golden and cheese is slightly melted.  Top one half with a cooked egg, crispy bacon, and avocado slices.  Slide the other half of the bagel on top and enjoy!
Spinach & Artichoke Grilled Cheese @themerrythought
Spinach and Artichoke Grilled Cheese – in a small bowl mix together some grated parmesan cheese, shredded mozzarella cheese, alfredo sauce, minced garlic and softened cream cream cheese.  (We just threw some in – no measurements – it is based off this dip if you want a recipe). Top Italian or French bread slices with cheese mixture, sliced artichokes and spinach. Butter the outsides, cook over medium low heat until golden.
Jalapeno Popper Grilled Cheese @themerrythought
Jalapeño Popper Grilled Cheese – spread softened cream cheese on the inside of cheddar cheese bread (try this recipe out).  Top one half with pickled jalapeño slices, toasted bread crumbs, and shredded white cheddar.  Top with the other bread slice, butter the outsides and cook over medium low heat until golden on the outside.
Chicken Bacon Ranch Grilled Cheese @themerrythought
Chicken Bacon Ranch Grilled Cheese – spread a light layer of ranch dressing on inside of bread slices. Layer with Muenster cheese, shredded cooked chicken, crispy bacon and more Muenster cheese.  Top with the other bread slice, butter the outsides and cook over medium low heat until golden on the outside. Serve with a side of ranch dressing for dipping.
Caramelized Onion & Spinach Grilled Cheese @themerrythought
Caramelized Onion, Spinach & Cheddar Grilled Cheese – top rye or sourdough bread with caramelized onions, spinach and extra sharp white cheddar.   Top with another bread slice, butter the outsides and cook over medium low heat until golden on the outside.
Caprese Grilled Cheese @themerrythought
Caprese Grilled Cheese – layer fresh mozzarella, sliced tomatoes, sprinkle of salt & pepper and basil on Italian bread. Drizzle a little bit of olive oil and balsamic vinegar on top. Top with another bread slice, butter the outsides and cook over medium low heat until golden on the outside.
Buffalo Chicken Grilled Cheese @themerrythought
Buffalo Chicken Grilled Cheese – mix together softened cream cheese, shredded cooked chicken, blue cheese dressing, Frank’s Red Hot and shredded mozzarella.  Spread on top of Italian or French bread. Top with another bread slice, butter the outsides and cook over medium low heat until golden on the outside.
Apple Cheddar Grilled Cheese @themerrythought
Apple Cheddar Inside Out Grilled Cheese – melt butter in a pan over medium low heat, add apples and cook until slightly tender.  Remove apples, add a little more butter and once melted, add slices of French bread.  Top one slice with cooked apples and cheddar cheddar cheese. Place the other slice of bread that was in the pan on top (this gets the bread hot so the cheese will stick to it).  Sprinkle shredded cheddar on the outside and flip over so the cheese can cook, about 2-3 minutes or until cheese is crispy.  Repeat with the other side.
Fluffernutter & Mascarpone Grilled Cheese @themerrythought
Fluffernutter Grilled Cheese – spread mascarpone cheese on the inside of bread slice, top with peanut butter and marshmallow fluff.   Top with another bread slice, butter the outsides and cook over medium low heat until golden on the outside.  Serve with some Nutella for dipping!
Cinnamon Apple Brie Grilled Cheese @themerrythought
Cinnamon Apple Brie Grilled Cheese – use cinnamon swirl bread, top with caramelized cinnamon apples and brie cheese.   Butter the outsides and cook over medium low heat until golden on the outside.

Here’s a grilled cheese tip: make sure to cook over medium low to low heat, that way your insides have a chance to get melted before the outside is done.  Also, when buttering the outsides of your bread, make sure your butter is soft so that you don’t tear the bread while spreading the butter on!
